Ingredients
- 3/4 cup coconut milk
- 2 tablespoons sweet soy sauce (kecap manis)
- 1 tablespoon curry paste
- 1 1/2 teaspoons ground turmeric
- 1 teaspoon grated fresh ginger
- 1 tablespoon vegan fish sauce substitute
- 2 (8 ounce) containers extra-firm tofu, pressed and drained
- 4 (8-inch) bamboo skewers
- 3 tablespoons creamy natural peanut butter
- 3 tablespoons coconut milk
- 3 tablespoons chili-garlic sauce
- 2 tablespoons sweet soy sauce (kecap manis)
- 2 1/2 tablespoons lime juice
- 1 teaspoon freshly grated ginger
- 4 lime wedges
Instructions
1
Combine coconut milk, kecap manis, a blend of spices including curry paste and turmeric powder, fresh ginger, and vegan fish sauce in a large container with a lid. Seal the container and thoroughly mix everything together. Allow the mixture to settle for at least 30 minutes.
2
Cut tofu into uniform 2-inch cubes and add them to the container. Seal the container again and shake it vigorously to coat the tofu evenly with the marinade. Let it sit for at least 30 minutes, allowing the flavors to penetrate.
3
Submerge bamboo skewers in water and let them soak for 30 minutes, making them more pliable.
4
In a separate bowl, whisk together peanut butter, coconut milk, chili-garlic sauce, kecap manis, fresh lime juice, and grated ginger until the sauce is smooth and free of lumps. Set it aside for later use.
5
Preheat an outdoor grill to a medium heat and lightly brush the grill grates with oil. This will help prevent food from sticking to the grill.
6
Take the tofu cubes out of the container and gently tap them to remove any excess marinade. Then, thread an equal number of tofu cubes onto each bamboo skewer.
7
Place the skewers on the grill and cook for 10 to 15 minutes, flipping them over halfway through. During this time, baste the skewers with their own marinade to keep them moist and flavorful.
8
Once the skewers are done, drizzle the peanut sauce over them and serve immediately with additional sauce and lime wedges on the side.
