Vegan Tofu Broccoli Quiche
Ingredients
  • 1 (9 inch) unbaked pie crust
  • 1 pound broccoli, chopped
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 pound firm tofu, drained
  • 1/2 cup soy milk
  • 1/4 teaspoon Dijon mustard
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground red pepper
  • black pepper to taste
  • 1 tablespoon dried parsley
  • 1/8 cup Parmesan flavor soy cheese

Preheat your oven to a high temperature of 400 degrees Fahrenheit (or 200 degrees Celsius, if you prefer metric).

Next, bake the pie crust in the preheated oven until it reaches a golden brown color, taking around 10 to 12 minutes. Remove the pie crust from the oven and set it aside for now.

Now, prepare the broccoli by placing it in a steamer basket over 1 inch of boiling water. Cover the steamer and cook the broccoli until it's tender but still retains some firmness, which should take around 2 to 6 minutes. Once cooked, drain the excess water.

In a large skillet, heat some oil over medium-high heat. Add sliced onions and minced garlic to the skillet and sauté until they're golden brown in color. Then, stir in the cooked broccoli and heat it through for another minute or so. Set this mixture aside for now.

In a blender, combine the tofu, soy milk, mustard, salt, nutmeg, ground red pepper, black pepper, chopped parsley, and Parmesan soy cheese. Blend the mixture until it's smooth and creamy.

Pour the blended tofu mixture into a large bowl and stir in the broccoli mixture you prepared earlier. Transfer this mixture to the pie crust you baked earlier.

Finally, bake the quiche in the preheated oven until it's set and cooked through, taking around 35 to 40 minutes. Remove the quiche from the oven and let it stand for at least 5 minutes before cutting into it.
