  • 1/2 cup uncooked white rice
  • 4 green bell peppers
  • 4 tablespoons olive oil
  • 1 onion, chopped
  • 8 ounces textured vegetable protein
  • 2 tablespoons chopped fresh parsley
  • 2 cups tomato sauce
  • salt to taste
  • 4 ounces shredded mozzarella cheese

Combine water and rice in a small saucepan; heat it until boiling point is reached.

Transfer the water-rice mixture to a low-heat setting on your stovetop and let it cook until the rice is fully tender and has absorbed all excess moisture, approximately 15 minutes.

Preheat your home oven to a temperature of 400 degrees Fahrenheit (or 205 degrees Celsius, if you have a thermometer).

Cut the tops off your peppers and carefully remove their seeds. Arrange them in a large baking dish, making sure they're snugly fitted.

Take the usable portion of the pepper tops and chop them up into smaller pieces.
