Ingredients
- 4 cups rice flour
- 2 cups lukewarm water
- 1 (14 ounce) can coconut milk
- 1 cup white sugar
- 4 teaspoons tapioca starch
- 1 1/2 teaspoons active dry yeast
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 teaspoons oil, or as needed

Combine the rice flour, water, coconut milk, sugar, tapioca starch, yeast, vanilla extract, and salt in a bowl until the mixture is well blended. Cover the bowl with a lid to allow it to mature, allowing air bubbles to rise to the surface over the course of approximately 2 hours. Thoroughly mix the batter.

Preheat your oven by greasing cake molds with oil. Place a steamer insert into a saucepan and fill it with water, leaving just enough room at the bottom of the pan to accommodate the insert. Position cake molds on top of the steamer and pour the batter into each mold, leaving a space at the very top for the cake to rise. Bring the water to a rolling boil, then cover and steam until a toothpick inserted into one of the cakes comes out clean, approximately 10 minutes.
