Ingredients
- 2 tablespoons toasted sesame seeds, divided
- 2 tablespoons water
- 1 1/2 tablespoons soy sauce
- 1/2 teaspoon white sugar
- 1/2 (8 ounce) package fresh spinach
- 1 pinch salt

Start by scattering 1 1/2 tablespoons of sesame seeds onto a flat surface, such as a plate. Use the bottom of a large pot or heavy measuring cup to crush and break down the sesame seeds, releasing their oils and flavor. Transfer the crushed sesame seeds to a bowl.

Next, combine the crushed sesame seeds with water, soy sauce, and sugar in the same bowl. Use a spoon or whisk to stir the mixture until it forms a smooth and well-combined dressing.

In a separate pot, bring a small amount of water to a rolling boil. Add a pinch of salt to the boiling water, then carefully add a handful of spinach leaves to the pot. Cook the spinach for approximately 1 minute, or until it has wilted and lost its vibrant color.

Immediately transfer the cooked spinach to a colander, allowing any excess water to drain off. Rinse the wilted spinach with cool running water to stop the cooking process and help retain its nutrients.

Using your hands, gently squeeze out as much moisture from the spinach as possible. This will help to remove excess water and make the spinach easier to work with.

Once you have removed as much moisture from the spinach as possible, cut it into thin strips.

Place the cooked and prepared spinach in serving bowls. Drizzle the sesame seed dressing over the top of the spinach, making sure to cover it evenly. Finally, sprinkle any remaining sesame seeds over the top of the spinach as a garnish.
