- 1 cup white rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 tomato, diced
- 2 cups vegetable broth
- 1 tablespoon paprika
- 1 teaspoon salt
- 1 teaspoon ground turmeric
- 1 cup peas
- 1 cup drained and quartered canned artichoke hearts

Combine boiling water with uncooked rice in a bowl; allow the mixture to rest for 20 minutes. Discard excess liquid.

Heat olive oil in a large, deep pan over medium heat; cook and stir the onion and garlic until they become translucent, taking around 5 minutes. Add green bell pepper, red bell pepper, and diced tomato; cook and stir until the peppers are slightly tender, approximately 3 minutes.

Combine cooked rice with vegetable broth in the onion-pepper mixture; bring the entire mixture to a boil. Lower the heat to low and let it simmer. Add paprika, salt, and turmeric; cover the pan with a lid and continue to simmer until the rice is tender, roughly 20 minutes. Introduce peas and artichoke hearts into the rice mixture; cook until heated through, adding an extra minute or so.
