- 1/2 cup vegetable broth, or to taste

Fill a 1-quart cooking vessel with water and bring it to a boil. Then, cook plantains in the boiling water with a small amount of salt until they can be easily pierced with a fork, approximately 25 minutes.

Next, combine mashed plantains with tomato sauce, chopped cilantro, sofrito, 1 tablespoon of olive oil, minced garlic, and a dash of sazon in a mortar or glass bowl. Blend the mixture thoroughly until it reaches your desired consistency.

Add the remaining 1 tablespoon of olive oil and a sufficient amount of vegetable broth to achieve the perfect balance between moisture and dryness. This will enable you to shape the mofongo into desired forms without it falling apart, while still allowing it to hold its shape in a container.
