- 1 onion, chopped
- 2 (8 ounce) cans tomato sauce
- 1 1/2 cups water
- 1/2 cup quinoa
- 1 (1 ounce) envelope taco seasoning mix
- 2 (14.5 ounce) cans black beans, rinsed and drained
- 24 corn tortillas

Begin by heating a generous amount of olive oil in a medium-sized saucepan over an intermediate heat setting. Allow the oil to warm up and become fluid, then introduce a sliced or chopped onion into the pan. Continue to cook and gently stir the onion until it has lost its raw, pungent flavor and has turned a translucent hue, typically taking anywhere from 5 to 10 minutes.

Next, add the pre-made tomato sauce, followed by a measured amount of water and cooked quinoa. Introduce the taco seasoning blend into the mixture, stirring well to combine all the ingredients. Bring the saucepan's contents to a rolling boil before gradually reducing the heat and covering the pan with a lid. Allow the quinoa mixture to simmer gently, waiting for it to become tender and soft, which should take around 15 minutes.

Once the quinoa has reached the desired level of tenderness, introduce a can of black beans into the saucepan. Continue to simmer the mixture until the black beans have heated through and reached a safe internal temperature, approximately 5 minutes more.

Finally, portion out the quinoa-black bean filling into individual tortillas and serve immediately.
