Preheat your oven to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius for international measurements). To prevent the loaf pans from sticking, cover them with a layer of parchment paper, ensuring they are completely lined.

Take the pecan halves and subject them to a grinding process in a food processor until they form a fine powder; transfer this mixture to a separate container. Next, subject the oats in the food processor until they too form a fine powder; combine these two powders. In another bowl, merge the mashed bananas with sugar until you achieve a smooth consistency; then add this mixture to the combined powder.

Mix in the white whole wheat flour, baking powder, coconut oil, and salt into the powder mixture until you achieve a thick and well-combined batter. Finally, pour this batter into the prepared loaf pans.
