Next, combine heavy cream, milk, sugar, lemon zest, and the sliced vanilla bean in a saucepan over medium heat. Stir constantly as you cook the mixture until it reaches a gentle simmer, which should take around 5 minutes.

Remove the saucepan from the heat source and discard the vanilla bean.
