Begin by placing the chocolate in a bowl, followed by adding a chipotle pepper and a pinch of salt to give it an extra depth of flavor.

Next, heat the cream in a small saucepan over medium-low heat until it reaches its boiling point. Once this is achieved, carefully pour the hot cream over the chocolate in the bowl and let it sit for 3 minutes to allow the mixture to meld together. Gently stir the chocolate and cream until it's completely smooth and free of lumps.

Now, take the chocolate mixture and pour it onto a sheet of plastic wrap on a work surface. Using one hand, pick up the edge of the plastic and begin to roll the chocolate into a rough log shape. Continue rolling, wrapping the chocolate in the plastic as you go, until it's fully formed.

Once you've rolled the chocolate into a log shape, refrigerate it for 30 to 60 minutes to allow it to chill and firm up.

To prepare the cocoa powder, place a small amount in a separate bowl.

Unwrap the chocolate and cut it into two equal halves, lengthwise. Then, take each half and cut them in half again, creating a total of four pieces.

Roughly cut these chocolate squares into 1/2-inch squares, making sure to keep the pieces relatively uniform in size.
