Unstuffed Cabbage Roll Stew

  • 1 tablespoon vegetable oil
  • 3 onions, sliced
  • 1 (28 ounce) can whole peeled tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 2 pounds green cabbage, cored, and cut into 3 inch chunks
  • 2 pounds lean ground beef
  • 1 onion, finely chopped
  • 2 eggs
  • 3 tablespoons water
  • 2 tablespoons instant white rice
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons fresh lemon juice
  • 1/3 cup golden raisins
  • 1 tablespoon honey
  • 1/2 cup packed brown sugar, or to taste

Begin by heating oil in a large cooking vessel over an intermediate temperature. Cook and stir sliced onions in hot oil until they become translucent, taking around 5 minutes to achieve this. Add crushed tomatoes and tomato sauce, using a spoon to gently break up whole tomatoes into smaller pieces. Season with 1 1/2 teaspoons of salt and a pinch of pepper, covering the pot to allow for slow cooking. Simmer for 20 minutes, stirring occasionally.

During this time, prepare a separate component by combining ground beef, finely chopped onion, eggs, water, rice, 1 1/2 teaspoons of salt, and a pinch of pepper in a mixing bowl. Mix everything together using your hands until it's thoroughly blended. If the mixture is too moist, add additional rice to balance it out. Form the mixture into small, spherical meatballs and place them on a plate; refrigerate for 20 minutes to firm up.

Once the meatballs have chilled, place them on top of the tomato mixture. Cover the pot and simmer over an intermediate temperature until the meatballs are firm and cooked through, taking around 15 minutes to achieve this. Gently stir the meatballs into the tomato mixture, covering the pot again and continuing to simmer for an additional 45 minutes.

During this final stage of cooking, stir in some lemon juice and taste the stew for seasoning. If it needs more lemon juice, add it accordingly. Stir in raisins and honey to give the stew a sweet touch. Add brown sugar gradually, tasting after each addition to ensure it's not too sweet.

Finally, cook the stew over an intermediate temperature for 15 minutes more.
