Preheat the oven to its highest temperature setting, which is 215 degrees Fahrenheit or 102 degrees Celsius. Line two baking trays with a heat-resistant, non-stick paper called parchment paper.

In a large bowl, combine egg whites, vanilla extract, and cream of tartar. Utilize an electric mixer to beat the mixture on maximum speed until it reaches a soft, fluffy consistency. Gradually incorporate sugar into the mixture while continuing to beat until stiff peaks form. Verify that all of the sugar has dissolved by gently pinching a small amount between your fingers; if it still feels gritty, continue to beat until the mixture becomes smooth.

Transfer the egg white mixture into a piping bag. Introduce food coloring in three distinct colors, spacing them evenly apart and pushing the colors down the sides of the bag using a butter knife.

Pipe the mixture onto the prepared baking trays in 1 1/2-inch 'pirally'-shaped dollops. Place the meringues close together, as they will not expand during baking. If necessary, add more color to the piping bag to achieve a desired intensity of color. Sprinkle edible glitter over the meringues.
