Silky Mashed Potatoes
Ingredients
  • 6 Yukon Gold potatoes, peeled and cut into 1-inch pieces
  • 2 cups Swanson® Chicken Broth or Swanson® Certified Organic Chicken Broth or Swanson® Natural Goodness® Chicken Broth
  • 1/2 cup light cream
  • 2 tablespoons butter
  • salt and ground black pepper to taste

Combine diced potatoes with the chicken broth in a 3-quart saucepan over medium-high heat; stir until the mixture reaches a rolling boil. Lower the heat to a moderate level, cover the pan with a lid, and continue cooking until the potatoes have achieved tender consistency, approximately 10 minutes.

Carefully pour the cooked potatoes into a colander to remove excess water, reserving the chicken broth for later use.

Return the potatoes to the saucepan and add the reserved chicken broth, heavy cream, and unsalted butter. Use a masher or potato ricer to achieve a smooth consistency. Season the dish with salt and pepper to taste
