  • salt and pepper to taste
  • 6 baking potatoes
  • 1/2 cup shredded Cheddar cheese
  • 1 egg, beaten
  • 1/4 cup butter
  • 1 cup sliced green onions, divided
  • 1/2 cup milk
  • paprika to taste

Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).

Mix together oil, salt, and pepper in a small bowl. Gently brush the potato skins with this mixture to coat them evenly.

Place the potatoes in the preheated oven, without covering them with foil. Allow them to cook for 50-60 minutes, or until they are tender and easily pierced with a fork.

Remove the potatoes from the oven and carefully pry off the tops of the skins. Scoop out the soft flesh into a large bowl, setting aside the intact potato skins for later use. Add shredded cheese, beaten egg, melted butter, and half of the green onions to the potatoes.

Mash the potatoes using a fork or potato masher, gradually adding milk as you mix. Transfer the mashed potato mixture back into the reserved skins.

Top each skin with the remaining green onions and a sprinkle of paprika. Return the potatoes to the oven for an additional 15 minutes, or until they are golden brown and crispy.
