SERVINGS

Ingredients
- 6 teaspoons kosher salt, divided
- 1 large head cabbage
- 2 teaspoons oil
- 1/2 cup minced onion
- 1 (14 ounce) can tomato sauce
- 1 (14 ounce) can petite diced tomatoes, undrained
- 3/4 cup water
- 1 tablespoon red wine vinegar
- 1 teaspoon ground black pepper, divided
- 1 pound ground sirloin
- 1 cup uncooked white rice
- 2 cloves garlic, minced
- 1/2 teaspoon ground allspice
- 1 medium lemon, cut into 6 wedges
- 2 teaspoons chopped fresh parsley, or to taste
Instructions
1
Begin by filling a large pot with water and placing it on the stovetop to reach its boiling point. Once boiling, add 4 teaspoons of salt into the water and stir it in thoroughly.
2
Next, take a large head of cabbage and carefully remove any loose or outer leaves from the head. Then, submerge the cabbage in the boiling water for 1 minute to make it more tender.
3
After that, carefully lift the cabbage out of the water and set it aside on a clean surface.
4
Now, take the core off the cabbage head and gently place it back in the boiling water. Cook for 5 minutes, removing any outer leaves that start to loosen as you go.
5
Set aside 12 of the cabbage's largest leaves and reserve the inner portion for another use in your recipe.
6
In a medium-sized saucepan, heat some oil over medium heat on the stovetop. Once hot, add 2 tablespoons of minced onion that you set aside earlier and cook until it's translucent. This should take about 2 minutes, stirring occasionally.
7
Add the remaining onion to the hot oil and continue cooking until it's translucent. Then, stir in a mixture of tomato sauce, undrained diced tomatoes, water, vinegar, 1/2 teaspoon of pepper, and 1/2 teaspoon of salt. Bring the mixture to a simmer.
8
Reduce the heat to low and let it cook for 10 minutes, stirring occasionally.
9
While your sauce is cooking, preheat the oven to 350 degrees F (175 degrees C).
10
Now it's time to prepare your cabbage rolls. In a bowl, mix together minced sirloin, cooked rice, garlic, the 2 tablespoons of minced onion you set aside earlier, 1 1/2 teaspoons of salt, 1/2 teaspoon of pepper, and allspice until everything is well combined.
11
Next, take a softened cabbage leaf and place it on a cutting board. Remove the bottom portion of the stem, as this can be tough and unpleasant to eat.
12
Place about 3 tablespoons of your meat filling in the center of the leaf. Fold the sides inward and roll the leaf up tightly, like a burrito or spring roll.
13
Repeat this process with the remaining leaves and filling.
14
Pour 1 cup of your tomato sauce mixture into a 9x13-inch or 11x7-inch baking dish. Place your cabbage rolls seam-side down in the dish and pour the remaining sauce on top.
15
Cover the dish tightly with foil and bake it in a preheated oven for 1 hour.
16
Once done, lightly squeeze a wedge of lemon over each serving and garnish with some parsley.
