- 1/2 cup mushrooms, sliced
- 1 green bell pepper, sliced

- 1 clove garlic, minced
- 1 tablespoon minced fresh ginger root
- 1 tablespoon sesame oil

Cut the pork into extremely thin strips, ideally using partially frozen cuts to facilitate this process. In a moderate-sized bowl, combine the pork with mirin, rice vinegar, and soy sauce. Cover the bowl, then refrigerate the mixture while you prepare the remaining components.

Slice various types of mushrooms, green peppers, and the emerald-green parts of onions. Set these prepared ingredients aside for later use. Mince the white, pungent parts of green onions, garlic cloves, and ginger roots.

Heat a large cooking vessel, such as a wok or skillet, over medium heat. Once it reaches the desired temperature, brush the surface with sesame oil to prevent sticking. Sauté the minced green onion, garlic, and ginger until they emit a fragrant aroma. Increase the heat to a high level. Remove excess marinade from the pork strips, and carefully place them into the wok. Reserve the remaining marinade for later use. Cook the pork, stirring constantly, until it is no longer pink, approximately 4 minutes. Stir in the sliced mushrooms, green peppers, and emerald-green onion parts. Continue to cook, stirring frequently, until the vegetables are tender, about 4 minutes. Stir in the reserved marinade and cook for an additional 2 minutes.
