- 6 hot biscuits, split

Preheat a large skillet over medium-high heat and place the sausage inside. Use a spoon to break up the sausage as it cooks, stirring frequently to ensure even browning and cooking throughout, approximately 5-7 minutes.

Next, add a pat of butter to the skillet and let it melt. Evenly distribute a layer of flour across the bottom of the skillet, stirring constantly for 1 minute. Then, whisk in 2 1/2 cups of milk and make sure to scrape up any residue left behind on the skillet's surface. Bring this mixture to a gentle boil.

Subsequently, lower the heat to a low setting and continue cooking, stirring regularly, until the mixture thickens up nicely, around 10 minutes. If it becomes too dense, you can easily thin it out by adding a bit more milk or water. Add a pinch of hot sauce, some freshly ground pepper, and a dash of salt to taste, then cook for an additional minute.
