  • 2/3 cup fire-roasted diced tomatoes
  • 1/2 teaspoon hot pepper sauce (such as Tapatio®)
  • 1/4 teaspoon dried Mexican oregano
  • 1/4 teaspoon cayenne pepper

Begin by placing pinto beans in a container and submerging them under 2 inches of water. Allow the beans to soak for an extended period, typically ranging from 8 hours to overnight.

Next, drain the soaked beans and transfer them to a medium-sized saucepan. Fill the saucepan with water, leaving approximately 1 inch at the top. Add sliced onion, minced garlic, a blend of spices including chili powder, cumin, celery seed, salt, and black pepper. Bring the mixture to a rolling boil before gradually reducing the heat to a low setting, covering the saucepan, and letting it simmer for 1 1/2 hours.

Once the beans have finished cooking, use a colander to separate the liquid from the solid ingredients. Transfer the solids to a food processor and add diced tomatoes, hot sauce, dried oregano, and cayenne pepper. Process the mixture to achieve your desired consistency.
