Ultimate Onion Dip
Ingredients
  • 1 medium yellow onion
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt, or more to taste
  • 1/2 cup minced shallots
  • 1/2 cup diced red onions
  • 1/2 teaspoon granulated garlic
  • 1 tablespoon minced dried onion
  • 3/4 cup mayonnaise
  • 2 cups sour cream
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon cayenne pepper
  • 1/3 cup thinly sliced green onions, or more to taste
  • 1/4 cup thinly sliced fresh chives, or more to taste

Start by peeling the yellow onion and cutting off both ends, then cut it into two equal halves. Remove the skin from each half and place them on a cutting board with the cut-sides facing downwards. Make parallel cuts along the length of each half, then turn them over and slice across those cuts to chop. Continue chopping until you have approximately 2 cups of chopped onion.

Next, heat a generous amount of olive oil in a large skillet over extremely high heat. Carefully add the chopped onion and salt to the hot oil, then cook until the onions are a deep, rich brown color, taking about 7 to 8 minutes. Add sliced shallots and red onions to the skillet, stirring constantly as they begin to soften and develop a sweet flavor. Continue cooking for another 3 to 4 minutes, stirring frequently.

Once the onions have cooled completely, about 20 minutes later, transfer them to a bowl and stir in minced garlic and dried onion. Set the mixture aside to allow it to cool completely, which should take around 20 minutes.

In a separate bowl, combine mayonnaise, sour cream, black pepper, cayenne pepper, and the cooled onion mixture. Mix everything together until it is thoroughly combined.

Cover the bowl with plastic wrap and refrigerate the dip for 4 to 12 hours, or overnight. This will allow all the flavors to meld together.

Before serving, remove the dip from the refrigerator and stir in chopped green onions and chives. Taste the dip to see if it needs any adjustments to the seasoning, then transfer it to a serving bowl. Finally, garnish the dip with additional green onions and chives before serving.
