- 1 (16 ounce) package uncooked lasagna noodles
- 1 pound mozzarella cheese, shredded
- 1 (15 ounce) container ricotta cheese
- 1 pound firm tofu
- 1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
- 2 cups grated Parmesan cheese
- 1 (28 ounce) jar pasta sauce

Boil a substantial quantity of salted water in a large vessel until it reaches a rolling boil. Prepare lasagna noodles by submerging them for 5 to 8 minutes, or until they are almost tender but still retain some firmness; drain and refresh with cold water.

Combine grated cheese, ricotta cheese, tofu, frozen spinach, and 1 cup of Parmesan cheese in a spacious mixing container. Blend the ingredients together to create a harmonious mixture.

Place a single lasagna noodle flat on a surface. Distribute a layer of the cheese mixture evenly across the noodle, followed by a thin coating of sauce. Roll the noodle into a compact cylinder and position it seam-side down in a 13x9 inch baking dish. Repeat the process for each remaining noodle. Cover the top layer with the remaining sauce and a generous sprinkling of Parmesan cheese.

Place the prepared lasagna in a preheated oven at 350 degrees Fahrenheit (175 degrees Celsius) for 30 minutes, or until it is hot and bubbly throughout.
