  • 2 tablespoons corn syrup
  • 2 tablespoons water
  • 1 tablespoon honey

Preheat your oven by prepping a baking dish with parchment paper, measuring out baking soda in a small bowl, and having a heat-proof spatula at the ready.

Combine sugar, corn syrup, water, and honey in a saucepan fitted with a candy thermometer. Heat over medium heat until the mixture becomes thinner but still retains its cloudy appearance. Allow it to bubble until the mixture clears and the thermometer registers 300 degrees F (149 degrees C).

Withdraw from heat. Gently incorporate baking soda into the mixture until just combined.

Utilize a spatula to carefully pour the mixture into the prepared dish. Avoid spreading it out or compressing the mixture, as this can cause the bubbles to lose their structure. Allow it to cool completely, for at least 30 minutes.

Carefully lift the candy out of the pan by removing the parchment paper. Tap against the counter and use your fingers to break it into individual pieces.
