- 1 pinch salt
- water to cover
- 1 lemon, halved
- 2 stalks celery, sliced
- 1 small onion, chopped
- 2 carrots, sliced, or more to taste
- 2 cups all-purpose flour
- salt and ground black pepper to taste

Place chicken and a small amount of salt in a large container; cover with water. Bring to a boil, removing any impurities from the surface with a slotted spoon. Add lemon, celery, onion, and carrots to the pot. Simmer the broth over medium heat until the chicken becomes tender enough to easily break apart, approximately 1 hour.

Discard lemon. Remove chicken from the pot; let it cool down.

In a separate large bowl, combine flour, salt, and pepper. Create a depression in the center of the mixture. Gradually add 2 to 3 scoops of hot broth into the well, mixing it with a spoon until a dough forms and comes together in a cohesive ball.

Transfer the dough to a floured surface. Gently knead it until smooth and pliable. Roll out into a large rectangle; cut into small, uniform dumplings.

Carefully drop the dumplings one at a time into the simmering broth. Cook, occasionally stirring it, until they become tender, approximately 30 minutes.

Bone the chicken and chop it into pieces. Add the cooked chicken back to the pot; cook until heated through, roughly 5 minutes.
