  • 3 stalks celery, chopped
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 large jarred roasted red bell peppers, chopped
  • 3/4 cup dry Cabernet Sauvignon
  • 3 tablespoons tomato paste
  • 1 1/2 teaspoons red pepper flakes, or to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons chicken bouillon granules
  • 2 teaspoons Italian seasoning

Prepare the chicken by coating it evenly with a combination of salt, pepper, and finely ground flour.

Next, activate the pressure cooker's cooking function and choose the 'Saute' option. Warm half of the olive oil in the device, then carefully add the chicken pieces and cook until they are nicely browned on both sides, flipping them halfway using a pair of tongs, approximately 10 minutes. Transfer the chicken to a plate for now.

Heat the remaining olive oil in the pressure cooker. Sauté sliced celery and onions until they become translucent, about 3 minutes. Introduce minced garlic into the mixture, followed by a medley of sautéed mushrooms, green bell pepper, diced red bell pepper, and roasted red pepper. Continue cooking until the aromas are released, approximately 1 minute more.

Return the chicken to the pressure cooker. Add a rich Cabernet Sauvignon wine, tomato paste, red pepper flakes, garlic powder, onion powder, bouillon cubes, and Italian seasoning. Close the lid securely and lock it in place. Follow the manufacturer's guidelines to select high pressure, set a timer for 11 minutes, and wait patiently.

After the cooking time has elapsed, carefully release the pressure using the 'quick-release' method as instructed by the manufacturer, approximately 5 minutes. Unlock and carefully remove the lid afterwards.
