- 1 ube (purple yam), peeled
- 1 1/2 cups whole milk, divided
- 1 cup coconut milk
- 1/2 cup white sugar
- 1 (.25 ounce) package unflavored gelatin

Place a steamer insert into a saucepan and fill it with water, making sure the level is just below the bottom of the insert. Bring the water to a rolling boil, then add ube and cover the saucepan with a lid. Steam the mixture until it's tender, which should take around 20 minutes. Allow it to cool down for about 10 minutes, until you can handle the insert easily.

Once cooled, transfer the ube to a blender or food processor and blend it into a smooth purée. If you don't have a blender, you can also mash the ube thoroughly with your hands.

In another step, combine 1 cup of this puréed ube, 3/4 cup of whole milk, coconut milk, and sugar in a blender or food processor. Blend the mixture until it's completely smooth.

Next, pour 3/4 cup of whole milk into a saucepan and sprinkle some gelatin on top. Let it sit for 5 minutes, allowing the gelatin to soften.

Heat the milk-gelatin mixture over low-medium heat in the saucepan, stirring constantly until the gelatin is fully dissolved. This should take around 3 to 5 minutes.

Now, pour the ube mixture into the saucepan with the milk-gelatin mixture. Increase the heat to medium and bring the mixture to a simmer, stirring occasionally, until you see steam rising from it. This should take another 3 to 5 minutes.

Finally, pour the mixture into individual serving glasses or molds. Place them in the refrigerator and let it chill until it's set, which should take around 3 hours.
