Twice-Baked Sweet Potatoes with Bacon

  • 1/2 tablespoon olive oil
  • 1 (8 ounce) package bacon, diced
  • 1/3 cup sliced green onions
  • 1/4 cup diced jalapeno peppers
  • salt to taste
  • freshly ground black pepper to taste
  • cayenne pepper to taste
  • 1/2 cup shredded sharp white Cheddar cheese
  • 2 tablespoons creme fraiche
  • 2 teaspoons fresh lime juice
  • 2 tablespoons shredded sharp white Cheddar cheese, or to taste

Firstly, set the oven to a high temperature of 400 degrees F (200 degrees C).

Next, position the sweet potatoes on a baking sheet. Use a sharp knife to poke holes in each potato and then drizzle with olive oil, gently massaging it into the skin. Ensure even spacing between the sweet potatoes.

Thus, place the sweet potatoes in the preheated oven and bake until they are fully tender, taking approximately 35 minutes.

Simultaneously, cook the bacon in a pan over medium heat. Continue stirring until the bacon becomes crispy and the fat turns frothy, which should take around 4 to 5 minutes. Add green onions and jalapeño; stir for another minute before removing from heat.

After the sweet potatoes have cooled down, turn off the oven and prepare to use it again. Cut off one-third of the top of each potato, holding the knife at a 45-degree angle.

Then, scoop out the sweet potato flesh from both the top and bottom halves of each potato, leaving at least 1/4 inch of flesh in the bottoms to form the shells.

Following that, season the sweet potato flesh with salt, pepper, and cayenne. Combine 1/2 cup of cheese, creme fraiche, and lime juice in a bowl. Mash the sweet potato flesh with a potato masher.

Add the bacon mixture to the mashed sweet potatoes and mix until well combined. Spoon the filling into the prepared sweet potato shells.

Finally, sprinkle remaining cheese lightly on top of the filled sweet potatoes. Bake until heated through and the tops have started to brown, taking 20 to 25 minutes.
