- 1/4 cup minced green onions
- 3 tablespoons butter
- salt and ground black pepper to taste

Preheat the oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Fill a large pot with water and bring it to a rolling boil. Add cauliflower florets and cook until they reach your desired level of tenderness, but avoid overcooking, 3 to 5 minutes.

Carefully pour the water into a large container and transfer the cauliflower to it. Utilize a masher or a similar tool to crush the cauliflower, leaving some of its natural texture intact.

Set aside 1/2 cup of Cheddar cheese and 1 tablespoon of bacon bits. Combine the remaining 1 cup of Cheddar cheese, the reserved bacon bits, softened cream cheese, sour cream, chopped green onions, melted butter, salt, and pepper into the mashed cauliflower mixture.

Transfer the combined mixture to an 8-inch square baking dish. Sprinkle the reserved Cheddar cheese and bacon bits evenly on top. Bake in the preheated oven until it reaches a hot, bubbly consistency, 30 to 35 minutes.
