- 1 teaspoon minced garlic
- 1 (14.5 ounce) can diced tomatoes
- 1 (3 ounce) can tomato paste
- 2 tablespoons balsamic vinegar
- 2 teaspoons dried parsley
- 1 teaspoon dried basil
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup small-curd cottage cheese
- 1 cup shredded mozzarella cheese

Prepare zucchini noodles by passing them through a spiralizer or julienne peeler. Transfer the noodles to a colander and generously sprinkle 1 tablespoon of salt over them, allowing them to release excess moisture for approximately 20 minutes. Rin
