- 3 ribs celery, sliced
- 3 carrots, thinly sliced
- 1 large onion, chopped
- 3 cups chopped cooked turkey
- 2 cups leftover stuffing
- 2 large tomatoes, peeled and chopped
- 3 sprigs fresh parsley, minced
- 6 cups turkey stock
- 1 1/2 cups egg noodles

Begin by heating the butter in a large cooking vessel over a low flame, allowing it to melt and become fluid. Next, add the chopped celery, carrots, and onion into the pot; continue to cook and stir until these vegetables are tender and easily pierced with a fork, taking around 8-10 minutes to achieve this.

Now, introduce the turkey into the pot along with the stuffing, tomatoes, and parsley; stir well to combine. Pour in the turkey stock, then bring the soup to a rolling boil before gradually reducing the heat and allowing it to simmer, partially covered, as the flavors meld together, taking approximately 1 hour to reach this point.

In a separate pot, bring a substantial amount of salted water to a rolling boil. Then, cook the egg noodles in this boiling water, stirring occasionally until they are tender but still retain a slight firmness to the bite, taking around 7-9 minutes.

Once the noodles are cooked, remove them from the water and transfer them to a deep serving dish. Next, ladle the hot soup over the noodles in the serving bowls.
