Turkey Stuffed Poblanos
Ingredients
  • 1 pound ground turkey
  • 1 (4 ounce) can chopped green chilies
  • 2 teaspoons taco seasoning mix
  • 4 ounces cream cheese
  • 1/2 cup salsa
  • 2 green onions, chopped
  • 1 pinch salt
  • 3 ounces shredded Monterey Jack cheese
  • 4 poblano peppers
Instructions
1
Heat a large skillet over high heat, allowing it to reach the desired temperature. Cook and stir turkey in the hot skillet until it reaches a browned, crumbly state, taking approximately 5 to 7 minutes. Remove excess fat from the skillet using a paper towel or by draining it.
2
Next, add green chiles and taco seasoning to the skillet, mixing well. Gradually incorporate cream cheese into the mixture in small portions, blending it seamlessly with the turkey. Introduce salsa and green onions to the skillet, stirring until they're fully incorporated.
3
Season the mixture with salt, allowing its flavors to meld together. Continue cooking until it reaches a bubbly state, approximately 2 minutes later.
4
Add shredded Monterey Jack cheese to the skillet and cook, stirring constantly, until it's fully melted and incorporated into the mixture. This should take an additional 3 minutes.
5
Preheat your oven to a suitable temperature, positioning the rack about 6 inches away from the heat source. Line a baking sheet with aluminum foil, preparing it for use.
6
Place peppers onto the prepared baking sheet and cook under the preheated broiler until their skin has turned dark and blistered, taking 5 to 8 minutes. Remove the peppers from the oven and adjust the temperature to 350 degrees F (175 degrees C).
7
Transfer the blackened peppers into a sealed bag, allowing them to steam as they cool for approximately 15 minutes. Once cooled, carefully remove the outer skins, taking care not to damage them.
8
Slice the peppers along one side and extract their seeds. Add stuffing to the peppers, placing them in a suitable baking pan.
9
Bake the stuffed peppers in the preheated oven for 20 minutes.
