Turkey Spinach Meatloaf

  • 1 cup coarsely chopped mushrooms
  • 1/4 cup chopped onion
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1/2 cup shredded part-skim mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese
  • 1 pound 99%-lean ground turkey breast
  • 3/4 cup Quaker® Oats (Quick or Old Fashioned, uncooked)
  • 1/2 cup fat-free milk
  • 1 egg white, lightly beaten
  • 1 teaspoon dried Italian seasoning blend
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

First, preheat your oven to a high temperature of 375 degrees Fahrenheit or 190 degrees Celsius.

To begin preparing the dish, lightly coat a medium-sized skillet with cooking spray and place it over a low heat setting. Cook the sliced mushrooms and onions in the skillet until they are tender, taking around 4 minutes to achieve this.

Once the onions are cooked, remove the skillet from the heat source and set it aside for now.

Next, combine the fresh spinach leaves with 1/4 cup of shredded mozzarella cheese and a sprinkle of Parmesan cheese in a bowl. Mix the ingredients together until they are well combined, then set the spinach mixture aside.

To prepare the turkey mixture, combine 1 pound of ground turkey with 1/2 cup of rolled oats, 1/2 cup of milk, 1 egg white, a pinch of Italian seasoning, salt, and pepper in a large bowl. Mix the ingredients together until they are just combined.

To assemble the dish, spoon 2/3 of the turkey mixture lengthwise down the center of an 11x7-inch glass baking dish. Create a deep indentation in the middle of the turkey mixture and fill it with the spinach mixture.

Top the dish with the remaining 1/3 of the turkey mixture, forming a loaf shape. Make sure to seal the edges of the dish completely to enclose the spinach filling.

Place the dish in a preheated oven and bake until the juices run clear and an instant-read thermometer inserted into the meat reads 165 degrees Fahrenheit or 75 degrees Celsius, taking around 30 to 35 minutes.

Finally, sprinkle the remaining 1/4 cup of shredded mozzarella cheese over the top of the meatloaf. Continue baking until the cheese is melted, taking around 1 to 2 minutes.

Once the meatloaf is cooked, remove it from the oven and let it rest for 5 minutes before slicing and serving.
