  • 1 1/2 pounds russet potatoes, peeled and cut into 1 1/2-inch thick slices
  • 6 tablespoons butter, cut into pieces
  • 1 cup milk
  • salt and pepper, to taste
  • 1 tablespoon vegetable oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 (1 ounce) packages instant chicken gravy mix
  • 1 cup water
  • 1 (16 ounce) package frozen peas and carrots, thawed
  • 2 cups shredded cheese of choice

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

To prepare the dish, lightly coat a medium-sized baking container with cooking spray.

In a saucepan, submerge diced potatoes in water and bring to a boil for 20-30 minutes or until they can be pierced easily with a fork.

Drain the potatoes and use an electric mixer to blend them into a smooth consistency. Add softened butter, milk, and a pinch of salt and pepper to taste; continue blending until you achieve your desired texture.

In a large skillet, heat 1 tablespoon of oil over medium-high heat. Cook diced turkey and sliced onion until the turkey is fully cooked, breaking it apart occasionally.

Combine the cooked turkey mixture into the prepared baking dish. Next, layer frozen peas and carrots on top of the turkey mixture.
