  • 1 (16 ounce) package uncooked farfalle pasta
  • 1 pound hot Italian turkey sausage, cut into 1/2 inch slices
  • 1/2 cup olive oil, divided
  • 4 cloves garlic, diced
  • 1/2 onion, diced
  • 2 small zucchini, chopped
  • 2 small yellow squash, chopped
  • 6 roma (plum) tomatoes, chopped
  • 1 green bell pepper, chopped
  • 20 leaves fresh basil
  • 2 teaspoons chicken bouillon granules
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup grated Parmesan cheese

Begin by filling a large pot with water and adding a moderate amount of salt. Bring the water to a rolling boil, then gently add the farfalle pasta. Cook for 8-10 minutes or until it reaches a slightly firm texture, which is known as al dente; drain the water and set the pasta aside.

In a separate large skillet, heat some oil over medium heat. Add sliced sausage and cook until it's evenly browned on all sides; remove the cooked sausage from the skillet and set it aside.

In the same skillet, add a little more oil to prevent sticking. Sauté minced garlic and chopped onion until they're soft and fragrant, then add sliced zucchini, squash, diced tomatoes, bell pepper, and fresh basil leaves. Stir in a bouillon cube to add flavor; season with some red pepper flakes for extra taste.

Continue cooking the vegetable mixture in the skillet for about 10 minutes, stirring occasionally.

Meanwhile, combine the cooked farfalle pasta, sausage, and shredded cheese in the skillet. Stir everything together and continue cooking for another 5 minutes or until the pasta is heated through.
