  • 1 medium onion, diced
  • 1/2 cup frozen peas and carrots
  • 2 tablespoons salted butter
  • 3 cups cold cooked rice
  • 2 cups diced cooked turkey
  • 2 tablespoons soy sauce, or more to taste
  • 1 tablespoon sesame oil, or as needed
  • 2 large eggs

Preheat a large skillet over medium heat and spray it with cooking spray. Sear sliced onions until they become soft and pale, approximately 5 minutes. Introduce frozen vegetables into the skillet and cook alongside melted butter, stirring occasionally until the vegetables become tender and thawed, 3 to 5 minutes.

Elevate heat levels to medium-high and combine cooked rice with diced turkey. Gradually add soy sauce, two tablespoons at a time, stirring constantly until the rice develops a rich color. Isolate the ingredients on one side of the skillet, then pour sesame oil into the empty center area. Stir-fry rice mixture until it's evenly coated, before relocating everything to the other side of the skillet. Crack eggs into the center of the pan and scramble them until they're fully cooked, taking around 2 to 3 minutes. Finally, mix the scrambled eggs with the rice mixture until they're perfectly combined
