Turkey Burritos
Ingredients
  • 1 pound ground turkey
  • 2 (7.75 ounce) cans Mexican-style hot tomato sauce (such as El Pato®)
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1/2 small onion, diced
  • 1 (16 ounce) can fat-free refried beans
  • 6 (10 inch) flour tortillas
  • 1 (16 ounce) container fat-free sour cream
  • 3/4 cup shredded reduced-fat Cheddar cheese
Instructions
1
Heat a large skillet over high heat, adding ground turkey and browning it until fully cooked.
2
Combine the browned turkey with a mixture of tomato sauce, frozen corn kernels, and diced onion in the same skillet.
3
Decrease the heat to a medium level and let the mixture simmer, stirring occasionally, until most of the liquid has evaporated, approximately 20 minutes.
4
In a separate skillet, warm canned beans over low heat until heated through.
5
Use the gas stovetop to toast tortillas for 1-2 minutes on each side, flipping them frequently.
6
Assemble the dish by filling tortillas with warmed beans, the turkey mixture, a dollop of sour cream, and shredded cheese.
7
Serve the dish immediately while it is still warm.
