Turkey Bean Chili
Ingredients
  • 3 tablespoons olive oil
  • 1 pound ground turkey
  • 1 large onion, diced
  • 1 green bell pepper, chopped
  • 1 small red bell pepper, chopped
  • 2 jalapeno peppers, diced
  • 4 cloves garlic, minced
  • 2 tablespoons cumin
  • 2 tablespoons chili powder
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon ground thyme
  • 2 cups beef broth
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (15 ounce) can red beans, drained and rinsed
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
Instructions
1
Preheat your large skillet over medium-high heat, then add olive oil to it. Next, incorporate the ground turkey and cook by stirring until it becomes crumbly and evenly browned, eliminating any remaining pink color. Remove excess grease from the skillet by draining it.
2
Subsequently, introduce the onion, bell peppers, and jalapeƱos into the skillet. Continue to cook by stirring until the onion becomes soft and translucent, taking approximately 8 minutes. Add garlic, cumin, chili powder, sugar, salt, black pepper, and thyme to the skillet. Proceed with cooking until fragrant, taking about 8 more minutes while stirring occasionally.
3
Add beef broth, pinto beans, red beans, diced tomatoes, tomato sauce, and tomato paste to the skillet. Bring the mixture to a boil, then lower the heat to low. Simmer until it thickens, taking about 45 minutes while stirring occasionally. To achieve a thinner consistency, cover the pot during this time.
