Turkey and Spinach Lasagna
Ingredients
  • 9 whole-wheat lasagna noodles
  • 1 teaspoon olive oil
  • 1/2 cup chopped onion
  • 1 pound ground turkey breast
  • 3 cups tomato sauce
  • 1/2 cup sliced fresh mushrooms
  • 3 tablespoons Italian seasoning
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 6 cups chopped fresh spinach
  • 2 cups fat-free ricotta cheese
  • 1/4 teaspoon ground nutmeg
  • 2 cups shredded mozzarella cheese

Preheat your oven to a high temperature of 375 degrees Fahrenheit or 190 degrees Celsius.

Fill a large container with water and add a small amount of salt to it. Bring the water to its boiling point, then cook lasagna noodles in it for 8 to 10 minutes. Drain the water and rinse the noodles with cold water.

Heat some olive oil in a pan over medium heat. Add an onion to the pan and cook it until it becomes soft and turns pale, approximately 2 minutes. Add ground turkey to the pan and cook for an additional 5 to 7 minutes, stirring constantly to break up any large pieces of meat. Add tomato sauce, mushrooms, Italian herbs, black pepper, and garlic powder to the pan and let it simmer for 2 minutes. Season the mixture to your taste.

Mix together spinach, ricotta cheese, and nutmeg in a large bowl.

Arrange three cooked lasagna noodles lengthwise at the bottom of a greased 9x13 inch baking dish. Spread one-third of the ricotta mixture, one-third of the turkey mixture, and one-third of the mozzarella cheese over the noodles. Repeat this layering process two more times, finishing with a layer of mozzarella cheese on top. Place the dish in your preheated oven and bake for 25 minutes. Remove it from the oven after 5 minutes to let it cool before serving.
