- 6 orange bell peppers, tops and seeds removed
- 1 pound ground turkey
- 1/3 cup chopped onion
- 1 (14.5 ounce) can diced tomatoes, or more to taste
- 1/2 cup white rice
- 1/2 cup water
- 1 teaspoon liquid smoke flavoring
- 1 cup shredded Gouda cheese

Heat your oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Fill a large container with water and put it on the stovetop, bringing it to a rolling boil; cook orange bell peppers in boiling water until they are slightly tender, taking around 5 minutes. Remove from heat and set aside.

Heat a large frying pan over medium-high heat on your stovetop. Cook and stir turkey and onion in the hot pan until browned and crumbly, taking about 5 to 7 minutes; drain any excess fat.

Combine tomatoes, rice, half a cup of water, and liquid smoke with the turkey mixture; cover the pan and let it simmer until the rice is tender, which should take around 15 minutes. Take the pan off the heat; stir in Gouda cheese.

Fill each orange bell pepper with the turkey mixture and place them, open-side up, in a baking dish. Cover the dish with aluminum foil.

Bake the stuffed peppers in your preheated oven until heated through and cheese is melted, taking between 25 to 35 minutes.
