Tuna Pasta with Garlic and Lemon
Ingredients
  • 1 (16 ounce) package penne pasta
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves crushed garlic
  • 1 (14.5 ounce) can crushed tomatoes
  • 1 tablespoon capers
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon red pepper flakes, or to taste
  • 2 (5 ounce) cans tuna, drained
Instructions
1
Begin by filling a substantial container with salted water and placing it on high heat until the liquid reaches its boiling point. Next, add penne pasta to the pot and cook with occasional stirring until it reaches your desired level of doneness, approximately 10 to 12 minutes.
2
In a separate, large pan, heat a small amount of oil over very low heat until it starts to simmer. Add sliced onion and minced garlic, then continue cooking and stirring the mixture until the onion becomes tender, roughly 5 minutes.
3
Add a variety of ingredients to the pan, including crushed tomatoes, pickled capers, freshly squeezed lemon juice, chopped parsley, and a pinch of pepper flakes. Allow the mixture to gently simmer until it thickens in consistency, around 3 minutes.
4
Meanwhile, cook the tuna in a separate pan until it is heated through and fully cooked.
5
Once the penne pasta has finished cooking, drain it in a colander and return it to the original pot. Pour the prepared sauce over the pasta, then toss everything together until well-coated.
