  • 1/4 cup finely shredded Parmesan cheese
  • 4 teaspoons minced fresh parsley
  • 1 teaspoon sea salt

Slice potatoes into thin strips, approximately 1 cm in width and thickness, using a mandoline or sharp knife. Submerge the sliced potatoes in a large container filled with cold water for about 30 minutes to remove excess starch.

Drain the potatoes and gently pat them dry with a clean cloth to prevent excess moisture.

Heat oil in a deep-frying vessel or large saucepan to 275 degrees Fahrenheit (135 degrees Celsius).

Carefully add one-quarter of the potatoes to the hot oil and cook, stirring occasionally, for 2 minutes.

Transfer the cooked potato strips to a clean cloth using a slotted spoon. Repeat frying with the remaining potatoes.
