Ingredients
- 1/2 cup unsalted butter, softened
- 2 teaspoons truffle oil
- 1/8 truffle, thinly shaved
- sea salt to taste
- 4 (6 ounce) New York strip steaks
- sea salt and ground black pepper to taste
- 2 tablespoons olive oil
Instructions
1
Combine softened butter, truffle oil, and shaved truffles in a bowl. Add a pinch of sea salt to the mixture and refrigerate for at least 1 hour to allow the flavors to meld together.
2
When it's time to cook the steaks, preheat your oven by placing a baking dish inside and setting it to 350 degrees F (175 degrees C).
3
Sprinkle both sides of the steaks with a generous amount of sea salt and pepper for added flavor.
4
Heat a sufficient amount of oil in a large, heavy skillet over high heat until it reaches a shimmering state. Add the steaks in batches if necessary, and sear them until they develop a nice brown color on both sides, approximately 3 minutes per side.
5
Take the hot baking dish out of the oven and carefully place the seared steaks into it.
6
Bake the steaks in the preheated oven for 8 to 10 minutes, or until they reach a firm and reddish-pink color with a juicy center. To ensure the steaks are cooked to your desired level of doneness, insert an instant-read thermometer into the center and check that it reads 130 degrees F (54 degrees C) for medium-rare.
7
Once the steaks are cooked, remove them from the oven and let them rest for 5 minutes to allow the juices to redistribute.
8
To serve, place a dollop of truffle butter on top of each steak by spooning 1 tablespoon onto the dish.
