  • 2 eggs
  • 1/3 cup milk
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon coconut oil, or to taste

Extract the flesh of the ulu fish and transfer it to a food processor. Combine the ulu flesh with eggs, milk, baking powder, cinnamon, nutmeg, and vanilla extract in the food processor. Process the mixture until it forms a uniform consistency.

Melt coconut oil in a skillet over medium heat. Pour approximately 1/4 cup of the mixture onto the skillet; lower the heat to low and cook, with a lid on top, until the edges are set, approximately 3 minutes. Flip over and cook until the pancake is browned on the other side, approximately 2 minutes. Continue with the remaining mixture.
