Tropical Teriyaki Beef Stir-Fry Bowl
Ingredients
  • 1 cup water
  • 1/4 cup pineapple juice
  • 5 tablespoons brown sugar
  • 1 tablespoon tamari
  • 1 clove garlic, grated
  • 1/2 teaspoon ginger paste
  • 1/8 teaspoon onion powder
  • 1 tablespoon tapioca flour
  • 1 (8 ounce) thinly sliced carne asada (beef steak)
  • 1 tablespoon grapeseed oil
  • 1 pinch red pepper flakes
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 small yellow onion, quartered and sliced
  • 2 carrots, sliced diagonally
  • 14 ounces refrigerated chow mein noodles
  • 1 teaspoon everything bagel seasoning
  • 1 tablespoon chopped green onion, or to taste

Combine water, pineapple juice, brown sugar, tamari, garlic, ginger paste, and onion powder in a resealable zip-top bag. Set aside 1/2 cup of the marinade, then mix tapioca flour with it and reserve for later use. Cut beef into 1-inch pieces, then add them to the marinade bag and seal it tightly. Refrigerate for 45 minutes.

Heat a multi-functional pressure cooker, such as an Instant Pot, over medium-high heat. Press the Saute function and add oil to the pot. Add red pepper flakes and cook the sirloin pieces until they are browned, about 5 to 7 minutes. Discard the marinade.

Arrange bell peppers, onion, and carrots in a steamer basket. Place the basket on top of the cooked sirloin pieces, then press Cancel to halt the cooking process.

Close and lock the lid of the pressure cooker. Press high pressure according to the manufacturer's instructions, then set a timer for 3 minutes. Allow 10 to 15 minutes for the pressure to build up.

Release the pressure using the quick-release method, following the manufacturer's instructions. This should take about 5 minutes. Once unlocked, carefully remove and discard the lid.

Take out the steamer basket and set it aside. Switch to the Saute function on the pressure cooker, then add noodles to the pot. Pour in the reserved marinade with tapioca flour and stir until it thickens into a sauce. Add the cooked vegetables to the pot, then toss everything together to combine.

Serve the dish immediately in bowls, topping it with everything bagel seasoning and garnishing with green onion.
