- 1 1/2 cups coconut milk
- 2 eggs
- 1 tablespoon vegetable oil
- 1/2 cup crushed pineapple
- 1 medium banana, chopped
- 1/2 cup brown sugar
- 1/4 cup butter
- 1 (8 ounce) can pineapple tidbits in juice, drained and juice reserved

Combine dry ingredients, including flour, baking powder, baking soda, and salt, in a mixing vessel.

Combine wet ingredients, including coconut milk, eggs, and oil, in the same vessel as before.

Combine pineapple chunks and banana slices into the wet ingredients mixture; blend just until combined, avoiding overmixing.

Combine brown sugar and butter in a saucepan over medium heat.

Add pineapple tidbits and 1 tablespoon of reserved pineapple juice to the saucepan; bring to a boil.

Reduce heat and simmer until the mixture thickens slightly, approximately 3-5 minutes.

Preheat a griddle to 325 degrees F (165 degrees C).

Pour 1/4-cup portions of the batter mixture onto the hot griddle.
