Tropical Mango Quesadillas

  • 1 tablespoon vegetable oil
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1 teaspoon chili powder
  • 1 pinch cayenne pepper
  • 1 pinch dried oregano
  • 1 pinch dried basil
  • 1 mango - peeled, seeded and diced
  • 1 (6 ounce) package seasoned chicken-style vegetarian strips (such as Lightlife Smart StripsĀ®)
  • 6 (10 inch) flour tortillas
  • 1 (8 ounce) package shredded Cheddar cheese
  • 1 cup arugula leaves
  • 1 (4 ounce) jar jalapeno pepper rings
  • 1 (8 ounce) jar salsa

Begin by placing the beans in a saucepan over medium heat, and cook for 5 minutes. Use a potato masher or large spoon to partially mash the beans. Next, lower the heat to low and keep them warm until you're ready to serve.

Heat a small amount of oil in a skillet over medium heat. Add the onion and red bell pepper to the pan, stirring occasionally until they're tender. Add a pinch of chili powder, cayenne pepper, oregano, and basil to give the dish a boost of flavor. Continue cooking and stirring until the vegetables are fully tender.

Add the mango and vegetarian chicken strips to the skillet, mixing well. Cook for an additional 2 minutes, until the vegetarian chicken is heated through and the flavors have melded together.

In a separate skillet over medium heat, place one tortilla at a time until it's soft and warm, about 2 minutes per side. Once the tortillas are ready, spread them evenly with equal amounts of black beans, mango mixture, Cheddar cheese, arugula, and jalapenos. Fold the tortillas over the filling, then top with a spoonful of salsa to serve.
