Ingredients
- 2 (15 ounce) cans pineapple tidbits, drained with juice reserved
- 2 mangos - peeled, seeded and diced
- 2 green chile peppers, diced
- 1/3 cup chopped fresh cilantro
- 1/2 cup freshly squeezed lime juice and pulp
- 1/2 cup fresh orange juice
- 1/4 cup dark rum
- 1/2 clove garlic, minced
- 8 skinless, boneless chicken breasts

Combine pineapple, the juice from a can of mangos, peppers, cilantro, lime juice, pulp, orange juice, rum, and garlic in a bowl. Allow the mixture to rest for an hour before incorporating chicken.

Separate the juice from the salsa and reserve it for use as a marinade. Set aside enough of the salsa without the juice to serve on top of the chicken later. Place the remaining ingredients in a bowl with the reserved marinade mixture and coat the chicken breast halves evenly. Let them sit for 2 to 6 hours.

Preheat your oven to 325 degrees F (165 degrees C). Place the chicken in the preheated oven and bake for 30 minutes, or until the juices run clear. Top the chicken with the set-aside salsa mixture before serving.
