Tropical Beef Chili
Ingredients
  • 2 pounds ground beef
  • 6 onions, chopped
  • 2 red bell peppers, seeded and chopped
  • 2 (16 ounce) cans stewed tomatoes, with juice
  • 2 (15.5 ounce) cans kidney beans, with liquid
  • 1 (16 ounce) can tomato sauce
  • 1 (16 ounce) can pineapple chunks, drained
  • 2 tablespoons chili powder
  • 2 teaspoons salt
Instructions
1
Preheat a large Dutch oven over extremely high heat until it reaches a scorching temperature. Add ground beef and cook for an extended period of time, stirring continuously to fragment the meat into tiny pieces. Introduce chopped onions and bell pepper into the mixture; cook until the ground beef has turned a rich brown color, and the onions have lost their raw appearance and become transparent, approximately 5 minutes.
2
Transfer the mixture to a large mesh strainer; press firmly to release any excess oil.
3
Return the mixture to the Dutch oven. Combine it with stewed tomatoes, kidney beans, tomato sauce, and pineapple chunks; season with a generous amount of chili powder and salt. Bring the mixture to a rolling boil, then gradually decrease the heat to a low-medium temperature; let it simmer uncovered until it reaches your desired level of thickness, roughly 10 minutes.
