Tropical Banana Nut Bread
Ingredients
  • 3 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups white sugar
  • 1 teaspoon ground cinnamon
  • 1 cup chopped walnuts
  • 3 eggs, beaten
  • 1 cup vegetable oil
  • 2 cups mashed very ripe banana
  • 1 (8 ounce) can crushed pineapple, drained
  • 2 teaspoons vanilla extract
  • 1 cup flaked coconut
  • 1 cup maraschino cherries, diced
Instructions
1
Preheat your oven to the optimal temperature for baking, which is 350 degrees Fahrenheit or 175 degrees Celsius.
2
Next, take a moment to prepare the loaf pans by lightly coating them with a non-stick substance, ensuring they are free from any residue. This will facilitate the removal of the baked goods later on.
3
In a spacious mixing container, merge the dry ingredients such as flour, salt, baking soda, sugar and cinnamon. Introduce the walnuts into the mixture, followed by the eggs, oil, banana, pineapple, vanilla, coconut and cherries. Combine these elements just until they are harmoniously blended.
4
Carefully pour the prepared batter into the two 9x5 inch loaf pans, making sure to distribute it evenly.
5
Place the loaves in the preheated oven and bake for 60 minutes, or until a toothpick inserted into the center of one of the loaves comes out clean.
6
After 60 minutes, allow the baked goods to rest in their pans for 10 minutes before transferring them to a wire rack, where they will continue to cool completely.
