Tropical Bacon Pineapple Pizza

  • 1 tablespoon extra-virgin olive oil, plus more for pan
  • 2 slices applewood-smoked bacon
  • 4 canned pineapple rings
  • 1 pound fresh pizza dough, at room temperature
  • 1/2 cup pizza sauce (from 1 [14-oz.] jar)
  • 2 cups (8 oz.) pre-shredded whole-milk mozzarella cheese
  • 1/4 cup thinly sliced red onion
  • 3 ounces Canadian bacon (about 4 slices), cut into 1-in. triangles

First, preheat your oven to a very high temperature of 500 degrees Fahrenheit (260 degrees Celsius), positioning the rack in the lower part of the oven. Next, lightly coat a large baking sheet with olive oil to prevent food from sticking.

At the same time, heat a large skillet over medium heat on your stovetop. Add some crispy bacon and cook, flipping it occasionally, until it reaches a golden brown color and becomes very crunchy, taking about 5 to 7 minutes. Transfer the cooked bacon to a paper towel-lined plate.

Now, pour out any remaining juices from the skillet without wiping it clean. Put the skillet back on the stovetop and add some sweet pineapple to cook until it's lightly browned and caramelized, taking about 3 minutes on each side. Remove the cooked pineapple from the skillet.

Chop the cooked bacon into small pieces and cut the pineapple rings into 3/4-inch pieces.

On a lightly floured surface, roll out some dough to form a 12-inch circle and place it on the oiled baking sheet. Use a fork to prick the dough several times, which will help reduce any air bubbles that may form. Spread a layer of pizza sauce evenly over the dough, leaving about 1 1/2 inches of space around the edges. Sprinkle some cheese, red onion, Canadian bacon, chopped pineapple, and chopped bacon over the sauce.

Finally, bake the pizza in the preheated oven until the cheese is melted and bubbly, the toppings are lightly charred, and the crust is golden brown. This should take about 10 to 15 minutes. Let it stand for 5 minutes before serving.
