  • 2 egg yolks, beaten
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 (3 pound) whole chicken, cut into pieces

Heat a substantial amount of oil in a deep frying device to 350 degrees Fahrenheit (175 degrees Celsius). Combine three cups of flour, garlic salt, one tablespoon of pepper, paprika, and poultry seasoning in a medium-sized bowl.

Blend one and a half cups of beer with the remaining one and a third cups of flour, egg yolks, salt, and an additional quarter teaspoon of pepper in a separate bowl; if the batter proves too thick, add more beer to achieve the desired consistency.

Moisten chicken pieces with a small amount of water before submerging them in the seasoned flour mixture. Shake off any excess and then dip the chicken pieces in the beer batter, followed by another coating with the seasoned flour mixture.

Carefully lower the chicken pieces into the hot oil in batches. Continue frying until they are crispy and well-browned, approximately 15 to 18 minutes. An instant-read thermometer inserted near the bone should read 165 degrees Fahrenheit (74 degrees Celsius).

Transfer the fried chicken pieces to a plate lined with paper towels to drain excess oil.
